Remove from the fridge, roll out pastry to 3mm thick and use a round cutter (about 8½cm) to cut out 12 bases and place them into muffin trays. Advocaat, along with notes of raisin and nut from the rum and the sherry, creates a Christmas pudding flavour with added ginger ale for that underlying spice – it’s Christmas cake in a glass. Unfortunately, it doesn't keep as long as a lot of other alcoholic drinks - you can't stick it in the back of the drinks cabinet for 5 years, and expect it to be as good as the day you opened it. Well, Snowball cocktails, made from advocaat, are so synonymous with Christmas it seemed a natural pairing. Lime juice adds zesty freshness to the drink whereas lime cordial can make it a little too sweet and the flavour is not so vibrant. Advocaat is not to be confused with Eggnog, another popular Christmas drink which has milk, cream and rum in it (as well as the eggs and sugar).

The Snowball cocktail tart has a custard made from Advocaat, poured into a pastry case, and topped with a lemon jelly. You can mix it up straight in your glass - no shaking, muddling, layering, or any other fancy techniques. As such, eggnog is not a suitable substitute in this Snowball cocktail recipe – only advocaat will suffice.
