Hibiki is a Japanese blend launched by the whisky giant Suntory in 1989 to celebrate their 90th anniversary; and it is really something special. Rather beautifully, ‘hibiki’ means resonance in Japanese, and this speaks to the artistic sensibility of the product. Hibiki was born in the form of a blend that was the result of sampling and tasting aged malt whiskies from one million casks at Suntory. The current incarnations are made from a blend of more than 30 individual malt and mellow grain whiskies, and the final blend is topped off with a whisky aged more than 30 years. This concludes a process that sees the master blender taste over 300 malt whisky samples a day. From its inception to its current forms, Hibiki’s craft and method reflects its core ideologies of harmony and resonance with a caring and precise vision. I’ve had the pleasure of tasting their 12 year old blend and it was delicious. So I had high hopes even though Japanese Harmony Master’s Select is a non age stated (NAS) travel retail whisky, which usually can be a guarantee for mediocre whisky. Deep harvest gold in colour. An initial scent of tart fruits, soon merging into baked apples and orange zest, with a trace of vanilla on a faintly tropical-floral base. A drop of water adds a hint of oak shavings. A smooth texture, with a sweet apricot start, drying in the warming, spicy finish. At reduced strength, the taste is more tart, with a slightly charred, oaky aftertaste.
