grapes/must cold soaked for 7 days followed by a feral fermentation lasting 96 hours. Eventually, cultured yeast is added, and the juice fermented dry. The young red wine is now macerated on the skins for a further 32 days before going to barrel. The wine was bottled after 18 months of barrel maturation in 20% new French oak. The focus from the outset has been on producing a luxury wine brand, and the flagship red Vergelegen V is one of the region’s most impressive and expensive wines. Proof indeed, that Stellenbosch and indeed the Western Cape can produce wines to rival the best of Bordeaux.

In 1798 the estate was sold to the Theunissen family, who planted extensive vineyards and concentrated on the production of grapes until an infestation by the phylloxera louse in the late nineteenth century wiped out most of Vergelegen's grape production. Sourced from north and north-westerly vineyards at Vergelegen, Somerset West, where soil types of granite, Hutton and weathered shale dominate. The 2019 harvest itself was warm, however, the nights were cool which is perfect for colour and flavour formation. They acquired Vergelegen at auction and showed the same care and interest in their new property as Lady Phillips, replanting the vineyards and expanding the cattle operation. Their son took over Vergelegen in the 1960s, although its importance as a wine producer faded under his stewardship, and by 1962 the last of vines had been pulled up.
