If you want an extreme heat statement from your hot sauce, Mad Dog 357 delivers that in spades. This is big-time heat, but with that comes tradeoffs in flavor and usability. The branding is fun and fits the experience. Very collectible. Garlic: Adds a robust, earthy flavor that counterbalances the heat of the peppers. Substitute: Garlic powder or onion if fresh garlic is not available. For those who like to use about 10 dashes of regular Tabasco on one bite, an equivalency here is like a drop. This builds to a point where you’ll have to stop if you don’t want to be rushing for milk, versus regular Tabasco where you can go all day. Usability

To push for the top end of the scale, use only Reapers or 7-Pot Brain Strains if you can get them. Pure Scorpions would be crazy killer hot. Or vary it up like I did. You can also make this with roasted jalapenos, or pretty much any pepper you prefer. Matouk's is a well-balanced scotch bonnet hot sauce with a delicious mustardy and vinegary tang. It’s surprisingly versatile. This is a company that likes to make hot sauces very hot. There’s more depth here than many super-hot sauces and very little dilution keeping you from the Carolina Reaper and scorpion pepper’s super-spiciness and natural sweetness.
