One of the biggest soleras in Jerez, the scale of this solera guarantees proper ageing for an average of fifteen years and exceptional quality for the Brandy Cardenal Mendoza Clásico.This brandy is made from alquitars of the best "holandas" (a type of fortifying spirit) and is aged according to the traditional solera y criaderas system. The casks previously held Oloroso and Perdo Ximénez sherries. They form part of one of the largest Solera Gran Reserva cellars in Jerez. In 1877 the Sánchez Romate family started producing brandy for private consumption. Word of its fine quality spread and the bodega decided to bottle it for commercial sale with the name Cardenal Mendoza. Brandy de Jerez has been around since the XVI century and almost certainly longer. It was also popular with the Dutch, and to this day the best spirits are called “holandas”. Unlike the French brandies, it is distilled from wine made from the Airén grape in both pot stills (alquitaras) and column stills depending on the quality required. Behind every bottle, there is a team that puts a huge effort into producing our brandy. Cognac is a city in the Charentes area of western France where distillation began in the early XVII century. The Dutch had for many years bought the local wine either for consumption as wine or for distilling to make gin or liqueurs. It soon became apparent that wine in its distilled form could be shipped more economically, and Cognac became a centre for brandy production. The wine is mainly made from the Ugni Blanc grape and is double distilled in pot stills known as “alembiques Charentais”. It is aged statically in French oak barrels of 350 litres and seasoned with young spirits. Cognac received its Appellation d’Origine Contrôllee (AOC) in 1936. Alquitaras pot stills Brandy de Jerez Solera Gran Reserva is the oldest of the bunch, aged for a minimum of three years. However, many brands far exceed this minimum: Cardenal Mendoza’s Solera Gran Reserva is aged for 15 years.Brandy de Jerez Solera is the youngest, which is aged for a minimum of six months and consequently has a fruitier character. The juice itself is distilled from grapes in copper pot stills before being aged in ex-Pedro Ximénez and Oloroso sherry casks in the solera style. The brandy that makes it into Clásico has been aged for at least 15 years.

Vino de un brillante color ámbar. De aroma punzante a avellana con matices de hierbas y tabaco y ligeras notas tostadas, de madera de roble. En boca es muy seco, suave, con acidez equilibrada y un postgusto prolongado en el que vuelven las notas de avellanas y frutos secos. Son vinos muy especiales que tienen una crianza biológica bajo velo de flor seguido de una crianza oxidativa.Vino de un brillante color amarillo dorado, transparente. De aroma delicado y punzante, con notas a levaduras y a masa fresca de pan y recuerdos almendrados que proceden de su larga crianza bajo flor siguiendo el sistema tradicional de criaderas y soleras. En boca es muy seco, con amargos suaves, con sabor a almendra y frutos secos, persistente. Arnaldo está decidido a demostrarnos que hay mucho más detrás del mojito y la piña colada.
