My initial reaction was "not the best" but then as I puttered around I realized how many times I went back to the pan for more, and yes - these definitely grew on me. That means you get recipes for Sausage and Pepper Hero with a shot of Bourdain eating on the toilet (pants up; he’s no Zappa), and an explanation of how he can't resist this street food, "served at temperatures that would be probably be considered suboptimal by the New York State Department of Health, squashed on a dirty griddle and then piled into a squishy hero roll with some browned onions and peppers, the whole thing a greasy, soggy, unmanageable mess that generally falls apart in my hands before I can eat it. I am a bit hesitant to comment because I set out with the best intentions but I bailed early re: the huge quantity of butter.

Every once in awhile, I'm reminded of an exhortation I found in Guy Peellaert's "Rock Dreams" that was quoted from Revelations: "Be hot or be cold, or else God will spit you from his mouth!I recommend using Bourdains Pomodoro recipe as instructed (or similar) as it is a light sauce that doesn't overwhelm the flavor of the meatballs which has a mild flavor given the addition of pork and veal to the beef and is enhanced by 6 whole sprigs of oregano (and 10-12 sprigs parsley) I worried the oregano would be too much, especially as mine was pretty pungent, being just picked fresh from my garden, and the sprigs were generous, but the qty of herbs was perfect for us! And for every complex, world-class dish, there's a home recipe that I easily envision me making on a weeknight.

APPETITES, in addition to presenting an eclectic, expletive-laden portrait of one's family's fare, is also a really great cookbook.

Then, when it came time to cook, I was afraid of overcooking the chicken--you use a grill pan (in our case, a large skillet) on high heat and cook the boneless skinless thighs for a full 7 minutes per side before transferring to a hot oven for an additional 10 minutes. Like many other celebrity-authored cookbooks of late, Bourdain tackles the subject of home entertaining head-on. I like an acid counterpart so added sliced peperoncini to an open-faced sandwich on rustic sourdough bread. Bourdain's biscuits have a slightly crunchier bottom, but are lighter and airier than the Cream Biscuits. It seems like a lot of spices in the marinade but the flavor is pretty subtle in the finished result.I picked up this cookbook from the library right before Thanksgiving, which was well timed, because it includes a Thanksgiving Tactical Primer with a 3 day preparation plan and some delicious, quite traditional recipes for the feast.
